Autumn Brownies


If you love chocolate, you are going to LOVE these.  The frosting, made with sweetened condensed milk, makes these super rich and chocolaty! 

The original recipe called for a homemade brownie, but my family LOVES the Ghirardelli Double Chocolate Brownie Mix ...so I guess I cheated a little.  

Autumn Brownies
BROWNIE:
Ghirardelli Double Chocolate Brownie Mix - 20 oz. 

FROSTING:
2 cups semi-sweet chocolate chips
1 14-oz. can Sweetened Condensed Milk
1 teaspoon vanilla extract

TOPPING:
1 cup miniature marshmallows
1/2 cup Reeses Pieces (or candy corn if you don't like Peanut Butter)
1/3 cup semi-sweet chocolate chips


Instructions:

HEAT oven to 325º F. Line a 13 x 9 x 2-inch baking pan with parchment paper. Spray lightly with no-stick cooking spray. Bake brownies according to instructions on the back of box.  Do not over bake.  

MELT 2 cups chocolate chips with condensed milk in a heavy saucepan over low heat, stirring until well blended. Stir in vanilla. Spread over hot brownies.

TOP brownies with miniature marshmallows and candy. Bake 2 to 3 minutes at 350'F or until marshmallows begins to melt. 

Microwave 1/3 cup chocolate chips in uncovered microwave safe bowl on HIGH 30 seconds at a time. Stir/repeat  until melted. Drizzle melted chocolate over marshmallows and candy. 

Cool to room temperature. Chill until everything is set.

Remove from pan by holding onto parchment paper and cut brownies into bars.

Mini Crustless Spinach Quiche

Yummy Goodness!  These make a great low carb 'TO GO' breakfast or could even be used as appetizer.   I like to keep extras on hand in the frig and reheat for a quick snack too! 
The recipe is simple and the results are DELICIOUS. 

Mini Crustless Spinach Quiche

Preheat oven to 350'F

3/4 cup liquid egg substitute or 3 large eggs or 3 /4 cup egg whites (I used 3 whole eggs)
1 package frozen chopped spinach (10 oz.) or one large bunch fresh spinach
3/4 cup shredded cheddarella (or any cheese of your liking)
2 tbsp bacon bits
Pinch or two of red pepper flakes
Salt and Pepper to taste

Spray the muffin tin cups with the cooking spray. Be sure not to omit this step, or the quiches will stick badly to the baking cups. Another option is to use silicone muffin pans.

Thaw and drain spinach. 

Mix all  ingredient in a bowl.

Fill the muffin tin cups with the mixture.

Bake for 20 minutes.

Remove cups and Serve!!!
