Time to Make the Donuts

Just a few simple ingredients and you'll be on your way.
I found this recipe on Pinterest ( my new addiction )  and I knew I had to try it.  So I purchased a Wilton Donut baking tray at Michaels (with a coupon, of course) ~ came home and gathered the ingredients.  The first batch I followed the recipe to a tee.  Here it is:

Baked Maple Cinnamon Donuts
Ingredients:

1 cup all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
pinch of salt
1 egg (lightly beaten)
1 6 oz container of low fat organic vanilla yogurt
1 tablespoon vegetable oil
2 teaspoons lemon juice
1 teaspoon pure vanilla extract
2 1/2 tablespoons real maple syrup
1 1/2 teaspoons cinnamon
1/2 cup sugar
2 tablespoons butter (melted)

Preheat the oven to 400 degrees.

Toss the cinnamon and sugar together and set aside.

In a large bowl whisk together all the dry ingredients. In another bowl stir together oil, lemon juice, vanilla extract, maple syrup, egg and yogurt. Make a hole in the center of the dry ingredients and pour the wet ingredients into the hole. Gently fold everything together until combined. Divide batter evenly into a greased donut pan.   The batter will be pretty thick and airy. Spoon into pan and gently smooth batter.  Before baking be sure to clean off any stray dough around the center of the donut. Bake for 10 minutes or until golden brown.

Let cool for a few moments and then flip over onto a cooling rack while still warm.

Use a pastry brush to butter your donuts and then dip each donut in the cinnamon sugar mixture to coat.  Makes 6 donuts.

Pretty and delicious! Yet I think they may not be as sweet as my two teenage boys would like. So the next batch I decided to 'shushz'  it up. I used apple flavored yogurt and eliminated the maple syrup and added a tablespoon of brown sugar and a teaspoon of cinnamon.  For the topping, instead of butter, cinnamon and sugar I melted 3 blocks of the vanilla almond bark then dipped and drizzled the baked donuts!

I think my boys will be thrilled with these sweet treats.

The possibilities for different flavor and toppings are endless. I already see chocolate covered chocolate donuts and even caramel coated baked apple donuts in my future!!!

Apple Chips

 
Ok, I've baked an apple pie ~ now what to do with all those extra apples????  Make apple chips of course!   These crispy, sweet chips are so easy to make and I would consider them fairly healthy too.

Here's how to make them:
Preheat your over at 200'F  Line baking sheets with parchment paper. Core 2-3 apples and slice thinly using a mandolin.  Be careful with the fingers!   Mix together 2 teaspoons of sugar and 1 teaspoon of cinnamon.  You can get creative and add a pinch or two of other spices too, if you like.  I added a pinch of ginger.  Sprinkle over apples and bake for 2 hours or longer until crips  Store apple chips in a sealed container.
